Many times a long day leaves a mother wondering what in the world she can make for dinner that will be quick and easy, yet still taste delicious. At my house it usually ends up being something "taco-ish". It isn't always traditional tacos.

I like to make what I call "taco goop." (Yes, very appealing, I know!) I keep browned hamburger in the freezer and I always have taco shells on hand as well. I thaw the hamburger and throw it in a pan along with salsa, cheese, beans, sour cream, taco seasoning...just anything I can find that looks like it would taste good in my concoction. I heat it up and we put the whole mixture in a taco shell. If I'm really ambitious, I might even manage to make some rice, which we either put into the taco shell with our "goop" or eat it on the side.

By the way, did you know you can make "Mexican rice" really easily just by dumping some taco seasoning in with it while it cooks? It tastes just as good as some really complicated recipes that I've tried.
